Moroccan pickled green plums

Moroccan pickled green plums may not be something you’ve ever heard of, but in my husband’s family they are such a treat that once the jar is opened it gets polished off in no time. The green plum season is very short, so you have to catch them when you can, which is now! I just googled pickled green plums and it seems that the Japanese are also fond of them! This is certainly something to try if you have a green plum tree, or are a little adventurous, but make a small quantity the first time, since these pickled plums are unusual…..they do grow on you though, speaking from experience!

Ingrediants:

  • green plums
  • kosher salt
  • a few hot green peppers

Pour hot boiling water over the inside and outside of a large canning jar. Wash plums and make a slit on each side halfway through the plum. Pack the plums into the jar, add 4 tablespoons of kosher salt for a very large jar, and fill the jar with water that has been boiled but set aside to cool. Seal jar and wait a week. Today my sister in law instructed my husband to wait four days, we’ll see if he can hold out even that long!

Basically the green plums turn yellow and become soft. Once you open the jar, refrigerate. I really don’t know how the plums are served usually since my husband eats them standing up in the kitchen, but I have served them at the Shabbos table together with the salad course and for dessert as well. Enjoy!

    I wish I could pin these blogs because I want to save so many of them because I have learned so much and want to remember them because it is my dream to visit Israel some day. How would you suggest I save these wonderful recipes, crafts, and inspirations so I am not cluttering my desktop or hard drive? I am certainly not as tech savvy as you and currently I don’t have a printer so I can’t save hard copies, but I would like to share this with my elderly parents who do not have a computer let alone the internet.     Thanks so much Peggy! If you install Pinterest on your computer, there is a row just below your navigation bar where you can click on Pin This and you can then pin everything to boards. The other option is to use the bookmarking function on your computer and bookmark your favorites into folders. I enjoy using Pinterest for visual things, though general info i save in bookmark folders. All the best!

    Youre so welcome, glad youre gonna try it! I forgot to say to slice the hot peppers lengthwise and place in the jar. For the first time my husband has committed himself to not opening the jars for three days, since his sister wisely told him that if he opens a jar and lets air in he will spoil the whole process! Ive been trying to find an actual recipe on google, and it seems that pickled green plums are popular also in India and Asia, though possibly not prepared in the same way. I also asked him what foods one would eat these with and he said its an apertif you know, as a little nibble with a drink on the patio! let me know how it goes!

    Currently in Morocco it is plum season I have not yet seen green plums however they do have yellow ones that look like this they are so yummy . I never thought of pairng a plum with hot green pepers that sounds like an interesting balance. I will need to try this someday.

    My husband said that the real plums one uses are small and green, (this is the closest thing he could find) similar to what I see is eaten pickled in Japan! Several of my husbands sisters came for a visit yesterday and the family had no problem finishing of a large jar, theyre apparently addictive to those who grew up eating them! all the best!

    Are these plums that will ripen to a soft sweet plum but picked early? Or are they green when ripe? I just had to pick my plum tree because it was so loaded branches were breaking. I have a whole 5 gallon bucket of unriped plums I’m trying to find uses for.

    Hi Laura, Sorry I couldnt answer your question right away, I was on vacation. These plums I believe ripen into yellow plums, and are picked early,
    maybe it originated because of the problem you are having! Pickling not yet ripe fruit also applies to grapes, and recently saw pickled tiny grapes on a website with Greek cooking, so it isnt just a Moroccan thing either! all the best!

    I put up 4 jars of these 5/31/2020 – after a huge branch broke off my 41yr old Santa Rosa Plum tree. 6/4/2020 I just opened up a jar and have not been able to stop, standing in kitchen eating out of jar! FANTASTIC! thank you, will be sharing with family and friends and making many more. Blessings

    Wow, that is fantastic, thanks for letting me know, and you sound exactly like my husband, who can’t even wait more than 2 or so days to sample! Funny he just told that is is green plum season and asked whether we have jars….which we do of course. Where in the world are you, rather where in the US, somewhere near Santa Rosa? I grew up going to the California state fair there! all the best to you, enjoy those plums!

    Hi Sara, just now saw your reply. We are in Sacramento, Cali. I made several more jars! They were vacuum sealed and still on the shelf. Do you suppose they will be fine till opened and refridgerated? I have been to Santa Rosa many times a sweet little city that has grown out of its shoes 😉 much like our little “cow town”, Like to go to Sebastapool to enjoy music at that old “Spanky’s” tavern…. before the “rona” of course… now just stay at home in garden or hit the road to camping up in the Sierras or down south to the Sequoia Nat Park. Where are you in the world? and thanks for sharing your knowldege ❤️
