Spelt Crackers With Sesame and Flax

I have always wanted to try making some healthy crackers, so when my daughter came across a recipe she wanted to try, I of course whole heartedly encouraged her. The first try didn’t work as this recipe which is batter must be poured as thinly as possible in order to work with the specified baking time, so the second time we changed the recipe a bit and made it with spelt flour for that added healthful touch!

And if they look a bit dry, well, oops they were but still tasty, and gobbled up by even the pickiest eaters! Guess what? We forgot to add the oil! You can certainly “forget” as well if you’re looking for something oil-free.

Spelt Sesame and Flax Seed Crackers:

Ingredients:

  • 1 cup spelt flour
  • 1 cup oatmeal (not quick cooking)
  • 3/4 cup un-roasted shelled sunflower seeds
  • 1/2 cup sesame seeds
  • 1/3 cup flax seeds
  • 1 1/2 tsp salt
  • 2 1/2 tsp olive oil
  • 2 3/4 cup water

Preparation:

Pre-heat oven to 160 C/320 F

Mix all the ingredients and pour into two large pans (at least 11 x 13″), or use your oven tray lined with baking paper, and make more than one batch. I have a 90cm wide oven and the tray is somewhat smaller, but was the right size more or less. Make sure the batter is as thin as possible!

Bake for 12 minutes or until just solid enough to score. Using a knife cut crackers into squares or rectangles as desired.

Return to oven for an additional 25 minutes or until browned and crisp. Enjoy!

Oh, and yes, at long last I cannot keep trying to take photos with my DSLR but not using manual as I spend so much time moaning and groaning over the lack of photo quality, sigh, and trying to correct it in photoshop. So that is it, I am publicly declaring that I am on the path to actually learning how to use my camera, at long last, and to hopefully creating the kind of gorgeous photos that I see so many other bloggers taking! Wish me luck! These photos were taken in manual mode just fooling around with the settings in the future I hope to report that my photos were taken using actual knowledge, it’s coming I can feel it, yippee.

    You know that I order such crackers especially from a factory in “Yosh” (יו”ש). I’m so glad to see a recipe for them!! I just have to try making them.
    As for taking photos – you should have seen my photos when I first started blogging….! You’d be scared!! Everything change once I took some photo-lessons. So good luck 🙂

    Thanks so much Winnie, your photos are now great, so hoping to get there too! Actually already seeing some great progress. I tried a sample of similar crackers in the natural food store, they were better than mine, but Im sure you can play around with the recipe a bit and get something really great. You might want to add more flour.
